This wine is made predominately from our Syrah vineyard of the same name. We have blended a little Mourvedre to add some fruity character to this wine. The Espinasses vineyard is predominately fine schist soils. The vineyard was minimally worked to avoid any subsoil compaction and sprayed with organic sprays to prevent mildews that are common in the district. The vineyard produced 25HL/Ha in 2013.
The grapes were picked by hand when we determined that the sugar, the acidity and the taste was to our liking. The whole bunches were crushed by foot in thousand litre open top micro fermenters. We kept the stems in the ferment to add complexity to the tannin structure. The fermentation was entirely natural. The wine was racked and sulphur dioxide was added after malolactic fermentation was complete to preserve the wine from oxidation. This wine is a deep and dark purple beast. The nose is of ripe blackcurrants and plums with hints of liquorice and anise. A lovely chary character has also complexed to add a hint of chocolate to the aroma and the front palate. The fresh fruit character of the wine lengthens the palate. Just one barrel was made of this super concentrated Syrah. We are very pleased with this wine and believe it truly expresses the unique appellation of Faugères.

Domaine La Sarabande was established so that Paul and Isla could fulfill their dreams of making serious long living robust wines. The vineyards have been carefully selected to establish a balanced mix of schist soils, good drainage, good aspect and a mix of young and very old vines. The vineyards are organic which means that no chemical herbicides or fungicides are used. Only organic fertiliser is used to replenish the soils. The winemaking is a combination of old and new world techniques. This means that the wines are hand harvested, naturally fermented and are bottled unfiltered and unfined. The strong emphisis is to bottle wines that express the soils and climate of the vineyard while being technically correct and are free of wine faults and spoilage.
